Whole wheat pastry flour and regular whole wheat flour are nutritionally the same, but are really not interchangeable. Pastry flour is very fine and soft, where as regular whole-wheat flour is a course ground. It would weigh your pastries/cakes down. However, it is possible to go half and half whole wheat and all-purpose for cakes.
