2 tablespoons vegetable oil
1 teaspoon brown mustard seeds
1 teaspoon cumin seeds
1 teaspoon Urad Dal
2-3 dried hot red chilies, torn in pieces
1 teaspoon salt
1/2 teaspoon ground turmeric
1/2 cup water
1 cup freshly grated coconut
2 fresh hot green chili peppers, slit lengthways
1 tablespoon chopped cilantro
For Goan Five-Spice Mix
10 green cardamom pods
14 cloves
1 teaspoon cinnamon sticks(broken in small pieces)
1 1/2 teaspoons cumin seeds
1 teaspoon black peppercorns

Directions

Place the cashew nuts in a large bowl, cover with water, and soak 8 hours or overnight, then drain.
Place all the ingredients for the Goan five-spice mix in a clean coffee grinder, and grind until smooth.
Reserve one teaspoon and store the remainder in a tightly lidded jar for future use.
Heat the oil in a large heavy-based pan over medium-high heat.
Add the mustard seeds, and as soon as they splutter and pop add the cumin, urad dal and red chilies.
Saute stirring until the chilies darken, and the dal starts to color, around 10 to 15 seconds.
Add the cashew nuts and salt, and cook for a minute or two.
Next add the turmeric, stir, then toss in 1/2 cup water.
Bring to the boil, then immediately lower the heat to low, cover pan and allow to simmer gently for 15 minutes.
Check after 10 minutes, and if the water has evaporated add a splash more.
After 15 minutes, remove the cover and add the coconut, green chilies and the 1 teaspoon of Goan five-spice mix.
Mix well, heat briefly, and serve garnished with cilantro.

Is MILK non veg drink ?

Asked by ISHITA in Food & Drink at   12:50 PM on July 15, 2009

Seema's Answer

Well,Milk is a non - vegan or strict vegetarian food. But milk is a pro lacto-ovo vegetarian and lacto vegetarian food. Pesco and pollo "vegetarians" only regard themselves as such. Carnivores revile vegetarians, so that term doesn't impress them. And vegetarians regard seafood and poultry or birds as not permissible.

It depends on your idea of 'vegetarian'. For most people, milk is vegetarian, but for strict vegetarians, dairy products are non-veg.

Milk is not a food, milk is a drink. Milk is a vegetarian drink though.
Vegetarianism is limited to avoiding the consume of animals only, which is why some vegetarians agree to have the product (milk, butter, etc.) but not the animal itself. Of course this is more of a choice, so it may vary. However, those who don't consume any animal products are categorized as vegans, and these avoid all animal products, including milk, obviously.

How to Grill Chicken?

Asked by Pallavi in Food & Drink at   2:52 PM on July 16, 2009

Seema's Answer

Well,
Remove the giblets from the cavity and rinse the chicken under cold water. Pat it dry with paper towels and season inside and out with salt, pepper and 2 tablespoons minced fresh basil, cilantro, rosemary, sage, tarragon or thyme.

Prepare a bed of hot coals in a charcoal grill. Rake the coals to one side; you'll grill your chicken next to the coals, but not over them.

Alternatively, turn only one of your gas grill burners on high heat, leaving half of the grill unlit.

Brush the hot grill grate clean with a stiff wire brush. Using tongs to hold a small, clean (but expendable) towel, thinly coat the grill rack with oil.

Put the chicken breast-side-down on the unheated side of the grill. Cook, covered, for about 30 minutes, then turn it breast-side-up and continue grilling until the skin in golden brown and the meat is cooked through, about 30 more minutes.

Check for doneness by cutting into the middle of a piece of chicken. The juices should run clear when you cut into the thickest part of the piece.

Let the chicken sit about 15 minutes before carving.

How to Make a Caffe Mocha?

Asked by Pallavi in Food & Drink at   2:52 PM on July 16, 2009

Seema's Answer

Well,A caffe mocha is espresso with steamed milk, cocoa or chocolate syrup and foamed milk or whipped cream. Although you won't find them in Italy, they're a popular, sweet treat in the United States, perhaps because you get your caffeine and sugar in one delicious cup.

Place chocolate syrup in bottom of a tall, thick glass or large mug.

Prepare 1 shot (1 to 1 1/2 oz.) of espresso.
Steam the milk.

Add 3/4 of the milk to the glass or mug and stir gently.

Add the espresso and stir again.

Add the rest of the steamed milk.

Place a dollop of whipped cream on top of mocha and sprinkle with chocolate shavings or cinnamon for decoration
