Lemon Cheese Cake
Crust
1 1/2 cups graham cracker crumbs1/4 cup sugar1/2 tsp. cinnamon ground 6 tbsp. butter melted
Filling
3-8 oz. packages cream cheese3 tbsp. flour2 eggs2 tsp. vanilla extract 1/2 cup sour cream1 cup sugar2 egg yolks grated rind and juice of 2 lemons Mix ingredients for cake crust. Press crust mixture into a 9 inch spring form pan. Using an electric mixer, blend filling ingredients until smooth. Pour filling mixture over the crust in the spring form pan. Bake in a preheated oven at 350 degrees for 50 minutes. After cooking is complete do not open oven door for another 30 minutes in order for cake to cool. Chill for 4 hours before serving. Serves 12.
Combine softened cream cheese and lemon curd in a kitchen aid or in a bowl with a hand mixer. add sugar and cream together. you may add lemon zest if you wish. beat in eggs one at a time, fully incorporating after each addition pour into shell in spring form pan and bake in oven until set. place a pan of water on a lower oven rack while cake is baking.
1 1/2 lbs cream cheese
8 oz lemon curd (harry and david's is great for this)
1/2 cup sugar
7 eggs
crust
2 cups ground vanilla wafers
1/4 lb butter melted
combine butter and ground wafers in Cuisinart or by hand. mix should hold together when pinched. press into bottom and up sides of spring form pan and bake at 325 until crust is golden. cool completely before adding filling
