Mastic is a type of resin which is collected from the tree of the same name. The island of Chios in Greece is particularly famous for its mastic production, although mastic is also harvested in other regions of the Mediterranean. Middle Easterners and Greeks have been using mastic for centuries in a variety of applications ranging from cosmetics to chewing gum. Many people who experiment with recipes from these regions have probably also noticed that mastic is used as a spice in many traditional foods

Havarti is a creamy semi-firm Danish cheese, named after the farm where it was developed at the turn of the twentieth century. Havarti is a mild cheese, similar somewhat to Tilsit or Gouda in flavor, and is peppered with small holes and irregularities. The cheese has a distinctive flavor which develops on the tongue, and can pack a subtle punch. In addition to being sold plain in blocks, Havarti is often flavored with dill, caraway, cumin or other spices.

Havarti was initially created by a Danish farmer's wife, who traveled to many parts of the world exploring the art of cheese making. Upon her return, she decided to experiment with different methods of making cheese, and named her finest creation after the farm it was made on. Havarti is made like most cheeses, by introducing rennet to milk to cause curdling. The curds are pressed into cheese molds which are drained, and then the cheese is aged. Havarti is a washed rind cheese, which contributes to the subtle flavor of the cheese.

Rouille is a thick sauce that is often used as a garnish with fish or fish based soups. The actual name for the sauce is actually the French word for rust. This is because of the reddish brown color of rouille when prepared with a traditional recipe.

There are actually two different ways to create rouille. The traditional method of preparing this red sauce is to use a combination of olive oil, chili peppers, and cloves of garlic. Breadcrumbs are added to give the sauce the proper texture. Along with these basic ingredients, the oil-based rouille may also include a wide range of spices, depending on the preferences of the chef. Saffron, orange peel and basil are examples of spices that often find their way into rouille.

Au jus broth tends not to incorporate much of the meat’s natural juices, but it is a good pairing with a roast beef sandwich. Typical ingredients in an American au jus include soy sauce, Worcestershire sauce, garlic, onion, and often beef broth. Sometimes, an au jus is merely a beef bouillon. You can even purchase a powdered form of au jus, which helps meat give off the au jus flavored juices. These may be skimmed from a pan after meat has cooked and brought to a quick boil.

Pate is also a French blend of meats and is often considered the same as terrine. However, pate may consist of meat that is more finely ground and terrine may contain meat that is more coarsely minced. Terrine is widely associated with the cooking dish. The terrine cooking dish also serves as a mold.

Punsch or Punch, sometimes also called Arrack Punch or Caloric Punch is a Swedish liqueur that is popular in Nordic countries. It is made from a base of the Indian drink Arrack. Various flavors of arrack are made, but most rely on the fermentation of fruit, often raisins, or of mixtures of sugar or grains. Punsch gained popularity in Sweden when the Swedish East India Company imported arrack into Sweden in the early 18th century.

There’s a little dispute about whether the name punsch is related to a Hindi word that translates as “five flavors,” and describes an alcoholic punch. Alternately it may have derived from the British use of the word punch, which is actually taken from the Hindi word. Most believe the British use of the word, and it was much used at that time. Another important factor is that many people did use arrack to make various types of hot and cold punches like the British did with other alcohols, so that the product that was included in the Swedish drink got mixed up with the name the British had for such a mixed drink: punch. Both punsch (arrack), and the drinks made for it were called punsch in Sweden.
