What is mean by stein ?

Asked by janaki ram in Food & Drink at   9:50 AM on January 08, 2009

Deepthi's Answer

A stein is a specially designed cup or mug which is intended to hold beer, although in theory, any beverage could be served in a stein. In Germany, the nation which invented the stein, the cup is better known as a steinkrug or glaskrug, depending on the material used. Krug means “jug” in Middle High German, while stein means “stone.” The shortened form of the name is extensively used outside of Germany, but asking for a “stein” may lead to confusion in some parts of Germany.

The feature which distinguishes a stein from other types of beer mugs is the lid. A traditional stein has a hinged lid which is operated with a small thumb lever located directly above the handle. The drinker can handle the stein and lid with one hand, which can be useful in a crowded social situation. The lid keeps beer from spilling out of the stein, and also helps to keep the beer clean and sanitary.

What is mean by brisket ?

Asked by janaki ram in Food & Drink at   9:49 AM on January 08, 2009

Deepthi's Answer

Brisket is a relatively inexpensive cut of beef, lamb or pork found on grocery store shelves, but it can also be one of the toughest cuts if not prepared properly. Meat cutters often divide a whole brisket into two separate parts before presenting it for sale. The flat cut brisket is very lean, but less flavorful and more difficult to prepare without a slow cooker. The other cut, called a point cut, is more marbled with fat and collagen, which makes it more flavorful and easier to tenderize through slow cooking at low heat.

A point cut beef brisket is often included on the menu of Southern-style barbecue restaurants, especially in the state of Texas. Although other animals have a brisket suitable for braising or barbecuing, the default setting for brisket served as barbecue is beef. Large slabs of point cut brisket or even whole brisket are placed on racks in a barbecue smoker, with an indirect heat source of wood chips providing a controlled slow cooking atmosphere. A beef brisket prepared for barbecue could spend at least 10-12 hours in a smoker or other cooker before it is ready to be served.

What is mean by beets ?

Asked by janaki ram in Food & Drink at   10:00 AM on January 08, 2009

Deepthi's Answer

Beets are edible plants native to the Mediterranean. They are grown all over the world, since they are easy to grow and they thrive in most climates, although they do not appreciate extreme cold or heat. Beets tend to be readily available in canned form in many grocery stores, and they can also be found fresh in grocer's and farmers' markets. A closely related plant, Swiss chard, is also very popular.

Unlike many food plants, all of the parts of the beet are edible. Many consumers are familiar with the fleshy root, but beet greens are also very tasty. In fact, some types of beets are specifically cultivated for their greens, and they are known as leaf beets or Swiss chard. The colorful stems and rich colors of the leaves also sometimes play a role in ornamental gardens.

What is mean by ricer ?

Asked by janaki ram in Food & Drink at   9:50 AM on January 08, 2009

Deepthi's Answer

A ricer is a kitchen gadget which can be extraordinarily useful, especially for making mashed potatoes and other pureed foods. For young parents, it can make an excellent gift, since a ricer is ideal for making baby food. Since ricers are somewhat obscure, you can also be assured that the parents will not receive multiples. Many kitchen supply stores sell ricers with a variety of inserts. You can also locate a ricer using your favorite search engine, although you may want to add “kitchen tool” to your search to clarify what you are looking for.

The design of a ricer resembles an oversized garlic press. One side of the ricer has an extrusion plate with a series of holes in it, while the other side is solid. Food is placed into the ricer and the solid side is squeezed towards the extrusion plate, usually using the handles of the ricer as leverage. The soft food compresses, and is ultimately forced out of the extrusion plate. The result looks like small grains of rice to some consumers, leading to the name for the device.

What is mean by cabrito ?

Asked by janaki ram in Food & Drink at   9:50 AM on January 08, 2009

Deepthi's Answer

Cabrito is a dish made from a young kid goat. Traditionally, cabrito is roasted, although the term is sometimes more generally used to refer to any dish with kid goat, ranging from stewed cabrito to grilled cabrito. This dish is widely eaten in Latin America, and it is also common in Texas and several other parts of the American Southwest, thanks to the heavy influence of Latin American cuisine on the food of this region.

Generally, the kid used to make cabrito is between one and three months of age, when it is especially young and tender. Even when young, however, goats have dark, gamy meat, which does best with a very slow cooking preparation which tenderizes the meat while bringing out the flavor. Traditional roast cabrito fits this requirement quite nicely, which may explain why it has become such a popular dish in Latin America

What is mean by cutlery ?

Asked by janaki ram in Food & Drink at   9:50 AM on January 08, 2009

Deepthi's Answer

Cutlery is a fancy word for silverware or flatware. It's the pieces we set on the table on a daily basis — forks, knives and spoons. Most Americans associate cutlery with knives and other kitchen cutting implements, but in reality, the term "cutlery" can be associated with any type of utensil. The history of cutlery is quite interesting.

Although there are cutting implements dating back through human history, the earliest known bit of metal table cutlery was the knife, which is believed to have been used as early as 2,000 BC, though it was extremely rare. Spoons came along probably around 5,000 BC; the earliest found were made of stone or clay, not metal. Forks came years later, somewhere around the 9th century. These didn't look like the fork one sees around the kitchen table nowadays, more like a small spear.
