What is Spelt?

Spelt is similar to wheat in appearance. However, spelt has a tougher husk than wheat, which may help protect the nutrients in spelt. Spelt flour has a somewhat nuttier and slightly sweeter flavor than whole wheat flour. Spelt contains more protein than wheat, and the protein in spelt is easier to digest. This means that some people who are allergic to wheat may be able to tolerate spelt. Spelt has gluten, just like wheat, so spelt is not suitable for a gluten-free diet.

In a saucepan, cook 2 2/3 cups of the milk with chocolate, stirring until chocolate is melted and milk is scalded. Mix cornstarch, sugar and salt; stir in remaining 1/3 cup milk. Add to scalded milk and chocolate mixture and cook over low heat, stirring constantly, until thickened and smooth.

Take 1 medium sized tomato, mash it and add it to the 2 cups of tamarind juice/extract.
Heat oil in a wok, and add mustard. After the mustard splutters, add cumin. Once the cumin becomes brown pour in the tamarind juice with tomatoes , and add salt, turmeric powder, mashed garlic, curry leaves, 1 red chilli split into two and rasam powder. Bring it to a boil, switch off the stove and add the coriander leaves.

* Wash and slit the green chillies and keep aside. Cut Pumpkin into cubes.
* Boil the vegetables in 1 cup water with salt and slit green chilies. Stir frequently till the vegetables are soft and completely cooked.
* Mash the vegetables lightly with a ladle, pour the raw coconut oil, mix and add the curry leaves.
* Adjust salt to taste and serve.

* In a kadhai mix gram flour and ghee over a low heat.
* Keep constantly stirring to avoid lumps.
* When it releases an appetizing smell, it is ready.
* Remove from the heat and allow it to cool.
* Add sugar and nuts to the gram flour and mix thoroughly.
* Now form ping-pong size balls of the mixture.
* Laddus are ready to be served.

1. Cook the minced meat for about 20 minutes with the quartered onions, green chillies, chopped ginger and garlic cloves.
2. Once cooked beat 1 egg into the mixture.
3. Coat the boiled eggs with the mince.
4. Fry the coated eggs in hot oil and keep aside.
5. To the remaining oil in the pan, add the chopped onions and the ginger. Fry until the onions turned brown.
6. Add 1 tsp red chilli powder, coriander powder, yoghurt, pureed tomatoes and the garam masala to the pan. Simmer until the gravy turns thick.
7. Slice the fried eggs in half and serve with the gravy.
