Directions

V inaigrette: Combine first five ingredients in a blender or food processor; with the machine running, slowly add oil to emulsify. Season with salt and pepper.

Salad: Heat oil in deep fryer. Place corn in a piece of aluminum foil and shape into a tight pouch. Poke a dozen small holes in the foil and drop into the fryer basket for about 4 minutes. Remove foil; return kernels to basket and place second basket on top to secure. Cook about 25 seconds, until kernels start to pop. Remove from oil and drain on paper towels; note that kernels may continue to pop.

Bring quinoa and 2 cups water to boil; reduce heat and cook until grains have split and doubled in volume, about 10-15 minutes. Drain. In a mixing bowl, toss with olive oil, salt, tomatoes, olives, cheese, and corn; divide among four plates.

Dressing:

1 cup of couscous
1 cup salted hot water
1 cup of chopped tomatoes
1/4 cup chopped parsley
1/4 cup fresh lemon juice (quantity varies depending on one's taste)
salt & pepper


Directions

Mix couscous and salted water, inmediately pour olive oil and save for later (it needs to rest at least 7 minutes). In another bowl mix the rest of the ingredients. Take a fork and separate the couscous grains. Mix everything and refrigerate until cold. 2 servings
