How to make Sukhi Chana Daal?  

Ingredients


2 cups chana(soaked overnight)
3 tomatoes(peeled and chopped)
3 tsps red or green chilly paste
2 potatoes(boiled and cut into pieces)
3 tbsps raw mango(peeled and cut into small pieces)
Salt
1 tsp turmeric powder
2 1/2 tsps garlic paste
2 tsps mustard seeds
10-12 curry leaves
3 tbsps oil
3 tbsps grated coconut
Corriander leaves for garnishing
Directions
Wash and boil chana with little salt in pressure cooker till just soft. Drain water and keep aside.
Heat oil,add mustard seeds and curry leaves,when they splutter,add tomtoes,garlic,mango pieces,turmeric and chilly paste, saute till tomatoes pulppy.
Add channa, potatoes, grated coconut and salt, mix well, reduce heat and braise for 5 mins.
Add 2 cups of water,cook on medium heat till gravy

1 tbsp. tender fenugreek leaves or dill leaves (finely chopped)
1" stick cinnamon
2-3 cardamoms
2 cloves
1 bayleaf
1 tsp. cumin seeds
1/2 tsp. turmeric powder
1/2 tsp. sugar
1 tsp. lemon juice
2 tbsp. ghee

Clean, wash, soak dal for 15 minutes.
Boil in 5 cups water, adding turmeric and salt.
Either pressure cook or boil till just soft.
Drain water.
Heat ghee in a heavy saucepan.
Add all spices, broken coarsely, and cumin seeds.
Allow to splutter, add onions. Stirfry till light brown.
Add dal, lemon juice, masalas and fenugreek leaves. Stir gently.
Take care not to mash up dal too much.
Serve hot with rice and kadhi, or paratha and a gravy vegetable
Garnish with fresh chopped coriande leaves.

1 tbs: Finely chopped fenugreek leaves or dill leaves
1" piece: Cinnamon stick
2-3: Cardamoms
2-3: Cloves
1-2: Bay leaf
1 tsp: Cumin seeds
½ tsp: Turmeric powder
½ tsp: Pepper powder
1 tsp: Lemon juice
½ tsp: Sugar
2 tbs: Ghee
Salt to taste

Method
Clean and soak dal for 15 minutes. Boil with turmeric powder and salt with 5 cups water till soft and drain the water.
Heat ghee in a pan and season cinnamon, cardamom, clove, cumin seeds. Add onions and fry till light brown. Add dal, sugar, pepper powder lemon juice, bay leaves and fenugreek leaves. Stir gently. Do not mash up dal too much.
Serve hot with paratha, nan, rice etc.

दालों में प्रोटीन्स विटामिन्स प्रचुर मात्रा में पाया जाता है और दालों का प्रोटीन मानव के शरीर द्वारा जल्दी पचा लिया जाता है. चना से आप मीठा या नमकीन ही नहीं हर तरह के व्यंज्यन बना सकते हैं.

आवश्यक सामग्री

* चने की दाल - 100 ग्राम
* टमाटर - 3 मीडियम आकार के
* हरी मिर्च - 2-3
* अदरक - 1 इंच लम्बा टुकड़ा
* घी - टेबल स्पून
* हींग - 2 पिंच
* जीरा - आधा छोटी चम्मच
* हल्दी पाउडर - आधा छोटी चम्मच
* धनिया पाउडर - 1 1/2 छोटी चम्मच
* लाल मिर्च पाउडर - एक चौथाई छोटी चम्मच
* गरम मसाला - एक चौथाई छोटी चम्मच
* हरा धनियां - एक टेबल स्पून (बारीक कतरा हुआ)

विधि

दाल को 2 घंटे के लिये पानी में भिगो दीजिये. दाल को पानी से निकालिये और धोकर कुकर में नमक और एक गिलास पानी डाल कर पकने के लिये रख दीजिये. कुकर में सीटी आने के बाद, धीमी गैस पर दाल को 6-7 मिनिट पकने दीजिये. गैस बन्द कर दीजिये. कुकर का प्रेसर खतम होने तक मसाला तैयार कर लेते हैं.

टमाटर, अदरक और हरी मिर्च मिक्सी से पीस लीजिये.

कढ़ाई में घी डाल कर गरम कीजिये. घी में हींग और जीरा डाल दीजिये. जीरा भुनने के पर हल्दी पाउडर, लाल मिर्च पाउडर और धनियां पाउडर डाल दीजिये. हल्का सा मसाला भूनें, इस मसले में टमाटर का पेस्ट डाल कर, मसाले को इतना भूनिये कि मसाला के ऊपर तेल तैरने लगे.

अब तक कुकर का प्रेसर भी खतम हो गया होगा. कुकर खोलिये और मसाले में दाल को मिला दीजिये. यदि आपको दाल गाड़ी लगे तो आवश्यकतानुसार पानी मिला लीजिये. उबाल आने के बाद 3-4 मिनिट तक दाल पकने दीजिये. गैस बन्द कर दीजिये. दाल में गरम मसाला औरा आधा हरा धनियां मिला दीजिये.

आपकी चने की दाल तैयार है. दाल को बाउल में निकाल कर, हरे धनिये ऊपर से डाल कर सजाइये. गरमा गरम चने की दाल चपाती, नान या चावल कीसी के साथ परोसिये और खाइये.

Ingredients:



1 cup - Chana dal
1 Onions, chopped
Salt To taste
1 - Turmeric Powder
Handful - Pinch Corainder leaves
2 - Cinnamon sticks
2 - Cloves
1 - Bayleafs
1/4 tsp - Cumin seeds
1 tsp - Lemon Juice
1 tbsp - Ghee

Preparation:

* Clean, wash and soak chana dal for one hour.
* Pressure cook the dal with 3 cups of water. Keep aside.
* Heat ghee in a pan, add cloves, cinnamon stick, bayleafs, cumin seeds and fry until they pop up.
* Add onions and fry till brown. Add salt and turmeric powder. Mix well.
* Add dal and let it boil for few minutes.
* Garnish with corainder leaves. When the dal will be cool, add lemon juice and stir well.
* Serve sukhi chana daal hot with rice or paratha.
