Ingredients:
• 2 Cups, carrots shredded
• 1 Can pineapple, including juice
• 2 Cups, apples chopped
• 1-1/2 Cups sugar
• 1 Package ball simple creations freezer jam pectin
• 1/4 tsp Ground cloves
• 1/2 tsp Ground cinnamon
• 1/4 tsp Ground nutmeg
How to make Carrot Cake Jam:
• Stir sugar, contents of pectin package, cinnamon, cloves and nutmeg in a bowl till well blended, keep aside.
• Combine pineapple with juice, carrots and apple in a saucepan.
• Bring it to a boil on medium-high flame, stirring occasionally.
• Cover and decrease the heat and simmer for about 5 minutes.
• Crush the fruit mixture with a potato masher and allow it to cool for about 15 minutes.
• Combine the fruit mixture with the pectin mixture, stir for about 3 minutes.
• Ladle the jam into clean jars with 1/4 inch headspace
• Let stand till thickened for about 30 minutes.

Carrot Cake

Dry Ingredients (Combine and set aside):
1 1/3 cups flour
1/2 tsp. salt
1 1/3 tsp. baking powder
1 1/3 tsp. baking soda
1 1/3 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. ginger

Combine:
1 cup sugar
1 cup cooking oil
3 eggs (added separately)

Preheat oven to 300 degrees Farenheit.
Add the dry ingredients to the wet mixture and stir well.
Fold in two cups of grated carrots and 1 cup of chopped walnuts (optional).
Pour into 9x13" non-stick pan and bake for 50-60 minutes or until done.
(Make sure it is cooked)

Icing:
8 oz. package of cream cheese
1/2 cup butter (or less)
1 1/2 cup of icing sugar (I just add icing sugar 'till the mixture tastes right)

Veg Fruit Cake

Ingredients:

Milkma id 1 tin
Maida 250 grams
Baking soda 1 tsp
Baking powder 1 tsp
Butter 125 grams
Vanilla essence 1 tsp
Soft drink 1 cup
Dry fruit pieces 1 cup

How to make Veg Fruit Cake:

Seive maida, soda, baking powder together.
Rub maida and butter finely.
Add milkmaid, and vanilla essence to the flour.
Mix well and Add the soft drink.
Rub little maida to the dry fruit pieces and add in above micture.
Mix well.
Preheat the over at 150 c for 8-10 minutes.
Pour the mixture in greased and dusted tin.
Put the tin in the oven and bake it at 150 c for 10 minutes.
After 10 min decrease the temperature at 100 c and bake for 5 min.
Allow to cool completely.
Veg fruit cake is ready.

DIRECTIONS

1. Preheat oven to 325 degrees F (165 degrees C).
2. Sift together the flour, salt, baking powder, baking soda, cinnamon and allspice. In a separate bowl, beat the eggs, gradually adding the sugar. Beat until thick and light in color, about 5 minutes. Beat in the oil, honey and coffee. Stir flour mixture into egg mixture. Chop the almonds coarsely and mix with raisins. Stir into batter.
3. Oil the two pans and line the bottom with waxed paper. Oil again. Fill each pan with batter to within 1 - 1 1/4 inches from the top. Bake for 65 to 75 minutes until cake tests done. Do not overbake. Let cool 10 minutes and remove from pan.
4. To Make Glaze: Boil together 1 1/2 cups honey, lemon juice, lemon zest and water. When glaze reaches a thick consistency, remove from heat and drizzle over cake. Sprinkle with almond slivers.

Ingredients

* 1 cup honey
* 1 cup applesauce
* 3 eggs
* 1 teaspoon cinnamon
* 1/2 teaspoon clove

* 2 cups flour (Can replace one cup of white flour with one cup of wheat flour)
* 1/2 teaspoon baking powder
* 1 teaspoon baking soda
* 1 cup strong brewed decaffeinated coffee (can be made from instant)

Directions

In a large bowl, mix together the first 3 ingredients.

In a separate bowl, combine the flour, baking powder, spices and baking soda.

Add the flour mixture to the wet stuff, alternating with the coffee; beat well.
4.

Put into one greased 9"x13" pan (or, alternatively, three 8" square pans).

well, This is a cake recipe which benefits from the addition of the honey, making it moist and sweet.

Ingredients:

3 oz Butter
3 oz sugar
2 Eggs, beaten
4 oz clear honey
8 oz self raising flour
1 level teaspoon baking powder

Method:
Set oven to 350F or at gas mark 4. Grease and line a seven inch round cake tin.
Cream together the butter and sugar in a bowl. Adding the eggs gradually, beat in the honey.
Sift together the flour and baking powder and stir into the honey mixture.

Transfer the mixture to the tin and bake for about 35 to 40 minutes or until a skewer inserted, comes out clear. Leave in the tin for about 10 minutes to cool then turn out onto the wire rack.

* 4 eggs
* 4 cups flour
* 1 cup sugar
* 1 teaspoon baking powder
* 1 cup oil
* 1 teaspoon vanilla
* 1 cup honey
* 12 ounces coffee
* cool and add 1 teaspoon baking soda
* 2 teaspoons cinnamon
* 1/4 teaspoon nutmeg
* Pinch of ginger
* 1/2 teaspoon cloves
* 1 cup raisins
* 1 grated apple

Beat eggs, add sugar, honey, oil, vanilla. Measure and sift together dry ingredients.

Add to egg mixture; add coffee, apple, and raisins last. Mix well.

Bake at 350 degrees for 1 hour. Use loaf pans sprayed with cooking spray. Line with brown paper.

Ingredients

* 250g clear honey , plus about 2 tbsp extra to glaze
* 225g unsalted butter
* 100g dark muscovado sugar
* 3 large eggs , beaten
* 300g self-raising flour

Method

1. Preheat the oven to fan 140C/ conventional 160C/gas 3. Butter and line a 20cm round loosebottomed cake tin. Cut the butter into pieces and drop into a medium pan with the honey and sugar. Melt slowly over a low heat. When the mixture looks quite liquid, increase the heat under the pan and boil for about one minute. Leave to cool for 15-20 minutes, to prevent the eggs cooking when they are mixed in.
2. Beat the eggs into the melted honey mixture using a wooden spoon. Sift the flour into a large bowl and pour in the egg and honey mixture, beating until you have a smooth, quite runny batter.
3. Pour the mixture into the tin and bake for 50 minutes-1 hour until the cake is well-risen, golden brown and springs back when pressed. A skewer pushed into the centre of the cake should come out clean.
4. Turn the cake out on a wire rack. Warm 2 tbsp honey in a small pan and brush over the top of the cake to give a sticky glaze, then leave to cool. Keeps for 4-5 days wrapped, in an airtight tin
