Quinoa (pronounced keen-wah) is a grain native to the South America.
It is the only plant that is a complete protein (it contains all 9 essential amino acids, which are otherwise only found in animal protein.)
It is gluten-free, and contains high levels of magnesium and iron.
The Incas called it "chisaya mama" or "mother of all grains".
It is usually cooked like rice, or 2:1 water to quinoa.
