Hi Friend,
Opting for a branch purely depends on your interests as it will have an impact on your future career.
In engineering all branches has equal chances for getting a good job. But after all it is a must that you have to enjoy doing your job.
1) Instrumentation has very good scope in gulf countries mainly in oil fields. If you are ready to go abroad it will definitively do good. The course will be about flow controls and sort of things.
2) If you are very much interested in programming go for computer science as there are vast opportunities.
3) Opting for Mechanical/ EEE depends on your interests. But comparatively Mechanical has more career prospects in India in its core sector. Well I did by Engg. in Mechanical. It is pretty much interesting to do job also. But initially you may not get attractive package as in software firms. You can select your career from a many fields like 1) Manufacturing, 2) Auto 3) Merchant Navy 4) Steel 5) Cement 6) Sugar 7) Power
8)Paper 9) Chemical etc..
And above all one can get into programming field from any of the above branches.
As NIT and Anna Univ are good colleges it depends on your career interest. But a degree from NIT will have a slight edge.
All the best for your career.
